Scratched Eggs

We have a family secret that forever changes egg breakfasts. Instead of scrambling your eggs, scratch them! My mother taught me to make these and some days they are the only thing that gets me moving in the morning. They are so easy and so delicious that you wonder why anyone makes eggs any other way.

Watermelon, Raspberry and Mint Smoothies

In these smoothies, watermelon, raspberries and mint are all working together to cool you down during these dog days of summer. To avoid sub-par frozen raspberries, I recommend buying or harvesting fresh raspberries and then freezing them rather than buying pre-frozen varieties. Using a ripe, bright red watermelon will also help you achieve maximum flavor potential

Scrambled Eggs With Buttery Bread Crumbs

Also known as the “poor man’s Parmesan,” pan-fried bread crumbs are most often found on top of pasta. But it turns out, they’re great on just about anything. Case in point: tender, fluffy scrambled eggs. Think of it like eggs and toast, just different. I always have English muffins around, but feel free to swap in your favorite bread. Sourdough, whole-wheat, multigrain, rye, anything works. And while this is wonderful with just the eggs and crumbs, if you’re feeling ambitious, you could call in some finely chopped chives, hot sauce, or even—wait for it—grated Parmesan.

Foolproof Cream Scones

Scones have a bad rap for being dry, but these ones are anything but. As with biscuits, the standard scone method involves cutting butter into dry ingredients—and hoping you don’t cut it too small or let it get too warm. This version skips the butter altogether and uses lots of cream instead. In turn, the recipe is nothing more than: dump ingredients in a bowl and stir. The white whole-wheat flour adds nutty flavor (though feel free to swap in an equal amount of all-purpose, or even half all-purpose and half standard whole-wheat). The raw sugar brings caramely vibes and an awesome crust. Serve with butter or, my favorites, clotted cream or crème fraîche.

Oven Bacon

Cooking bacon in the oven gives you perfectly crispy slices without any flipping or fussing, and the cleanup is superspeedy. It’s also the best way to make bacon for a crowd. You can cook the bacon directly on aluminum foil-lined baking sheets or on a wire rack set on top of the baking sheets. The latter method will give you extra crispy bacon, but you'll have to wash that greasy rack. Your choice! (To make bacon in an air-fryer, try our air-fryer bacon recipe.)

Overnight Oats

Overnight oats are, of course, a healthy breakfast and they’re easy to make, but they also feel like a special treat, sweet with dried fruit. Unlike oatmeal, uncooked but softened oats retain a fresh flavor and taste delicious cold. Top it with nuts just before eating for an irresistible crunch against the creamy oats. Keys to This Recipe How to Make Overnight Oats: Simply mix oats and milk in a 1 to 2 ratio and add sweeteners, salt or other add-ins, such as dried or fresh fruit, nuts or seeds, according to your tastes. For one breakfast serving of overnight oats, start with 1/4 cup oats and 1/2 cup milk. The Best Oats for Overnight Oats: Old-fashioned oats, also known as rolled oats, become tender and creamy when soaked. Quick-cooking oats, which are smaller, can end up pasty and steel-cut oats, which are sturdier, stay quite firm even after soaking. Milk Options for Overnight Oats: Dairy and non-dairy milks work well for overnight oats. Coconut, soy and oat milk yield thicker mixtures, which you can thin with more milk before serving if you’d like. If you use sweetened non-dairy milk, taste the soaked oats before adding more sweetener. Sweeteners for Overnight Oats: Soaking dried fruit — use your favorite — alongside the oats sweetens the mixture nicely, but you can stir in additional sugar, maple syrup or honey to taste just before eating.

Baked Eggs for a Crowd

Baked Eggs for a Crowd

The French long ago mastered eggs en cocotte —slightly coddled eggs baked at high heat with butter and cream, which thicken to a gravy as it cooks. There’s no finer way to enjoy an egg. To pull this off for a crowd, a large casserole dish coated with butter and partly filled with heavy cream acts as a bath in which to gently cook the eggs. To dress them up, add smoked salmon, a handful of kale or spinach leaves, thinly sliced ham, halved cherry tomatoes or sliced, cooked mushrooms to the mix before you crack in the eggs. Really anything goes here, but keep the accoutrements light and let the eggs take center stage. Finish with flaky sea salt (those large crystals melt on your tongue in just the right way) and any fresh herb you love.

Croissant Brittle

This scrappy idea hails from Sea Wolf bakery in Seattle. There, they take day-old croissants and turn them into magic. Co-owners Jesse and Kit Schumann kindly told me about their method, which inspired my own development here. You can use any type of croissant—from a bakery or the supermarket, fresh or stale. Best served with coffee.

Migas Breakfast Tacos

Tortilla chips in tacos may seem like overkill, but they’re not. Set into scrambled eggs that are loaded with onions and poblanos, they soften and enrich the mix while keeping some crispiness. A slice of avocado on top — along with melted cheese — adds a nice creaminess to the mix. These tacos work well with red or green salsa, so use your favorite. While these would impress at a weekend brunch, they also come together quickly on weekday mornings, and can be wrapped in foil to be eaten out of hand.
