CREAM CHEESE WITH CHIVES
I decided to jazz up our classic bagel breakfast recipe by adding chives to the cream cheese. Chives have a perfect oniony flavor with a tiny hint of garlic.

I came up with this combination one day when I'd finally gotten bored with the classic grilled cheese, and I've never looked back. It's not going to solve a craving for grilled cheese with Kraft singles and Campbell's tomato soup, but I've found this classed up sandwich can prompt cravings of its own. With so few ingredients, make sure to choose ones you love. I prefer cheddar so sharp it can bite back, honeycrisp apples, and sourdough bread. For the mustard, I like "moutare a l'ancienne,' which I think just means "made like in the olden days before we had machines to properly pulverize the mustard seeds."

While on honeymoon in Santorini, I was so inspired by the ingredients they used, their local dishes and their flavour combinations. One of which was the heavenly marriage of feta cheese, tomatoes and capers. It got me thinking about so many different types of recipes, and this particular one was a real success. It is totally fuss free and easy to make, and a real crowd pleaser. This dish is best served as a sharing dish, so plonk it in the middle of the table with some roughly torn crusty bread, and enjoy the relaxed company of your guests with glass of red wine.

Pasta with Mizithra and Garlic
I had this pasta for the first time at a wonderful Greek restaurant in Seattle. The owner told us how to make it, and I follow his instructions to the letter. It's totally unlike any other pasta I've ever had--the strands are coated with golden shards of mizithra cheese and garlic, giving the pasta a deep nutty flavor and an almost prickly texture. The secret here is the mizithra, an aged Greek cheese that doesn't melt when heated, and will brown and caramelize if you cook it in a hot pan. The whole dish comes together in minutes, and it actually tastes better at room temperature than it does warm.
