This is on the appetizer menu at a local Italian-ish restaurant, I love it so much that I order it as my main course every time I go. Needless to say, I had to recreate it at home. They use a wood-fired oven for their carrots, so if you have one laying around, you should too. If not, muddle through like the rest of us with your plain old, regular oven.

Makes enough to fill your favorite platter

Rigatoni and Cauliflower al Forno

Cauliflower is perhaps the least appreciated member of the large family of cruciferous vegetables, no doubt due to memories of encountering it boiled, flabby and timidly seasoned, if seasoned at all. When cooked properly, it is a delight. Cauliflower can stand up to rather bold seasoning, in fact. In this recipe, it gets garlic, sage, red pepper and capers. And it is browned in olive oil, which further enhances the flavor. If you want a terrific side vegetable, just serve the sautéed cauliflower and skip the rigatoni. But combining the cauliflower with large-format pasta, pecorino cheese and bread crumbs, then baking it until crisply golden, makes for a splendid meal.

Yogurt & Berry Tart With a Pecan Crust

I often will eat fruits and nuts plus yogurt for breakfast. This is basically a fancified version of that very simple breakfast. And look how pretty it is! Layering the ingredients into a tart not only makes it feel more fancy, it causes the flavors to hit in you in a different way. This tart has beautiful flavors of toasty nuts, tangy yogurt, and red ripe berries (raspberries are my favorite, but you could use all sorts of fruit! You could also top the crust with something else entirely -- I have visions of chocolate ganache on a pecan crust). I was surprised by just how good I thought it was -- it was one of those ideas that actually works out just how you'd hoped in the execution! It's easily healthy enough to eat for breakfast -- it lasts for several days in the fridge and you can just cut yourself a slice in the morning -- but it is nice enough for a light, summery dessert. The pecan crust is adapted slightly from the blog Passports and Pancakes. It might not seem like it will bake up as a functional crust, but it really does!
