It is also simply made vegan by using plant milk instead of the standard variety.

Chocolate Pavlova With Chocolate Mousse
Most Pavlovas are white and fluffy nests filled with whipped cream and fruit. This is a dark and fudgy reinterpretation, with cocoa powder in the meringue and bittersweet chocolate in the mousse on top. What was once billowing and light becomes rich and intense. Because the cocoa powder has a small amount of fat in it, the meringue here will not hold its shape as well as a regular pavlova. So there’s no need to pipe out any fancy designs, which will melt in the oven. Instead, decorate the top with fresh berries or chocolate shavings to create a showstopper of a dessert. You can make the meringue and mousse a day ahead, but don’t assemble the dessert until just before serving.

Caramelized Citrus
This is a modernized version of a dessert that was popular in Britain during the 1970s, a simple, stylish confection that was a standby of posh dinner parties: caramelized oranges. It was then and remains the sort of dish that is not particularly difficult to make, but still signals a home cook’s understanding of elegance. My recipe nods to, but is not of, that era. It calls for saffron, which infuses the sauce with its sweet-savory, haylike aroma, and for yogurt, which is a delicious partner to the fruit. You can make the dulce de leche a week ahead (store it in the refrigerator) and the cookies 5 days ahead (store them in an airtight container at room temperature). Once sandwiched together, the cookies will keep in a sealed container in the refrigerator for 3 days, but are best eaten within 24 hours of filling.

Almost Flourless Chocolate Cake
A 5-ingredient cake recipe that I received from my mom and have always loved this cake. It has the consistency of a mousse, but is really a cake. I think it is halfway between a soufflé and a cake. It has an airy texture and rich chocolate flavor without being too sweet…. so delicious! You could use a cup for cup flour to make this cake gluten-free.

On Hand Chocolate Souffle
I googled a bunch of quick chocolate things and then used my back pocket knowledge to bake this. Me version requires an oven safe ramekin. If you don't have one on hand, I reccomend turning to google and conducting experiments like I did. Serves one hungry chef or some friends willing to share.

Chocolate Peppermint Bars
A little-known fact: Creamy chocolate-covered peppermint patties are not hard to make at home. Here, the minty filling and chocolate coating are layered onto a cocoa-imbued shortbread base, which adds a cookie crunch to each bite. These keep well, so you can make them a week ahead; store airtight at room temperature. They also freeze well. The coconut oil makes the chocolate coating slightly shinier and a little more brittle in a good way, so use it if you have it. But if you don't have it on hand, you can omit it.
