3-in-1 Soup with Flanken and Potatoes
A comforting, delicious, hearty winter meal! I called this flanken potato soup a 3-in-1 soup recipe because it is a soup, a hearty dinner, AND veggies.

Spaghetti Aglio, Olio e Zenzero
It's a very simple adoption of the classic italian dish made with ginger. I'm making this for 10 years now and it is very popular with everybody...

Spaghetti al Tonno
My famiglia's delicious spaghetti al tonno recipe is served every Christmas Eve (La Vigilia di Natale). I love this meal and this recipe is so versatile.

Sweet and Spicy Salmon
It is sweet, spic, moist and delicious.

Halloumi, Fig and Pomegranate Salad
Fresh figs has slowly become one of my favourite fruits. It's easy to eat, with no seeds and no peeling. It is perfect for a refreshing and easy to make salad. There's nothing complicated about this dish. The only cooking involved is grilling or pan-frying the halloumi slices. So if you are too busy at work and have no mood to cook a full on hot meal when you get home, this will be a good option. Cut, grill, toss, plate and eat. Simple.

Diane Kochilas' Pasta With Yogurt & Caramelized Onions
This secret just might change your life: you can, and should, dress pasta with Greek yogurt, especially if you also then top it with caramelized onions and grated pecorino. Adapted slightly from The Glorious Foods of Greece (William Morrow Cookbooks, 2001).

Parsley Miso Pesto
I had a bunch of parsley but no nuts or Parmesan for my pesto recipe. What I did have was a tub of white miso which replaced both the nuts and cheese in pesto.

Chicken Fritz
This crispy, paprika-flavored chicken hash makes excellent use of leftover soup chicken - my grandma invented it and everyone in my family has been making it for decades.

Spaghetti with Olive Oil, Garlic and Pan-Fried jalapeños
Here’s to Spaghetti Aglio e Olio’s new incarnation – a pasta recipe with jalapeno olive oil recipe that might be zen-like but that is undoubtedly memorable.

Lemony Shrimp and Quinoa
This quick and easy lemony dish uses two of my favourite things.....Shrimp and Quinoa! These two items are on my list of quick and easy go to meals. You can do just about anything with them in a very short time.

The Grilled Lake House Burger
This is my burger mix. I bump up the umami just for good measure. It pays handsomely in the end. Make a build your own burger platter with lots of fresh stuff. I like Bibb lettuce, fresh cucumbers, pickles, fat slices of homegrown tomatoes, grilled red onion, cheeses of all kinds, and of course condiments like ketchup and whatnot. On a serious note, butter and grill those buns! It is the touch that makes all the difference.

Spicy Lemon Tilapia with Chunky Tomato Sauce
One random night, a recipe just popped into my head. I had never done it before, and I didn't know how it would 'pan' out. I just knew I wanted to include certain elements, like tilapia and tomatoes and a little bite, but I wasn't sure what to do. As the vision came together, I googled how-tos from places like Epicurious and Allrecipes in order to make sure I at least got the cooking part done right. I never imagined it would taste as delicious as it did! I served the tilapia over a simple cauliflower puree and roasted asparagus. I hope you enjoy!

Butternut Tomato sauce
I paid more than $6 for a jar of gourmet pasta sauce, but after reading the ingredients I realized it was pretty simple. Adding defrosted butternut squash--the whole package with a quart jar of homemade or quality prepared tomato pasta sauce--couldn't be easier. Not only does this add a great nutritional punch, but its a complex flavor and nice thickness that adds a lot to homemade sauce or baked pasta dishes.

Salt & Pepper Babyback Ribs
This recipe's salt and pepper baby back ribs were salty, but I found them strangely addictive; the meat was tender and moist. I will definitely make them again.

Chorizo, Mozzarella and Vegetable Mini Pots
My father gave me two beautiful Le Creuset mini-casserole pots. They've been sitting collecting dust in my cupboard for six months now because I couldn't figure out what to do with them. This Bank Holiday weekend I thought I would invite a friend over and see if I could come up with some way to use them. The resulting mini casserole seemed to go down pretty well so I thought I would post it here. Forgot to take after photos so an in-progress shot will have to do.

Salmon with Lemon Cream and Pea Shoots
These three items just seemed to go together, and it is fun to experiment with more unusual early-season produce!
Asian Barbequed Salmon
It doesn’t seem to go together. Asian flavors such as soy sauce, rice vinegar and sesame oil, with fish. But it’s a winner because salmon is a full flavored fish and can handle these bold marinade ingredients. This dish is not barbequed in the traditional way on the grill either. The addition of brown sugar gives the fish a barbequed glaze and the secret is to cook it in a hot, dry pan with no added oil or butter. No added fat and full of flavor score one for the home cook!

Basil-Ginger Marinated Pork Tenderloin
If you are looking for an effortless dinner with high potential to please, look no further. This is a subtly fragrant piece of meat to welcome the first spring vegetables, or refresh on a hot summer day. It requires almost no work, just a nice piece of tenderloin, a meat thermometer, and a tiny bit of greens on the side.

Cavatelli with Asiago Oat Crumbs
Sometimes great kitchen disasters lead to most surprising dishes. I have a wonderful recipe for cookies with flour, cheese and butter, and was trying to adapt it to work with oats. The first batch of cookies went nowhere. The cookies fell apart and literally turned into crumbs. Correction: they turned into the most delicious crumbs imaginable. I had a great deal of dough left, and plenty of room to experiment. And that is how a lovely pasta was born.

Teriyaki Chicken Skewers
A quick and easy summer recipe inspired by the tasty chicken kabobs freshly grilled at the farmer's market in San Luis Obispo, CA.

Skillet-Roasted Chicken Thighs With Dandelion Greens & Baby Carrots
The roasted chicken thighs with carrots recipe is an honest dinner, cooked simply, from only four ingredients that took up space in the refrigerator.

Simple, Spicy Chile Con Carne
My boyfriend's dad is an excellent cook who specializes in "cheap feasts." He was gracious enough to share this recipe with me. The ingredient list may be simple, but its spicy flavor pack a big punch. And the left over chile is great on everything from salads to eggs.

Creamy Crock Pot Pork
This is homestyle "comfort food" type meal - it is great warm up for cold nights. It is very easy to make, and super filling. It is great for those times when you want a cozy full meal.
