Coconut milk risotto (Arborio rice pudding)

Beet, Mushroom and Beef Burgers
I incorporated a roasted beet into the beef and roasted mushroom mix, allowing me to shave another couple of ounces of beef off the formula, and the resulting burger is a winner. The beet contributes moisture, texture and great color – almost a rare meaty look – to these almost-veggie burgers (I tried the grated roasted beets and mushrooms as a mix without the meat and it didn’t hold together; I plan to work on a vegetarian version at a later date.) Meanwhile I love the texture of this patty and the herbal flavors of the mint and chives. If you want to splurge a little (after all there are only 2 ounces of beef in each patty), melt a little blue cheese or gorgonzola on top. I like to serve this with a spicy green, like baby arugula or mizuna.

New Classic Buttercream
This is real French buttercream reorganized to eliminate the trickiest steps. Traditional French buttercream requires pouring hot sugar syrup over eggs while beating steadily -- without scrambling them or splattering most of the syrup around the sides of the bowl. Then the mixture is reheated (to be sure that the eggs get cooked but not scrambled) and beaten again to cool before beating in the butter. This recipe serves 16, so living on my own it means two weeks of pulled pork sandwich for lunch. But when each subsequent sandwich surpasses the previous, that can hardly pose a problem.The choice of fruit juice is arbitrary, but I like mango because it reduces into the richest glaze. This method of making coleslaw is inspired by the Taiwanese pickling technique of first making a vinegar simple syrup, then pouring the hot syrup over the vegetables and letting it sit for three days. The result is something incredibly flavourful with a gutsy balance of acidity to cut through the pork’s fattiness.
Dukkah Dusted Lavash Crackers
I came up with the idea for these when I was making pita chips for a large party a few years back. Splitting the pitas and then brushing with olive oil just seemed to take forever. I was asked to make the same appetizer a week later, so when I was in the store looking at the pita and thinking how "pita" described perfectly what it's like making pita chips for 30, I noticed the lavash right next to them. Inspiration struck, I came up with this much easier alternative, and I haven't made a pita chip since. I like using my own dukkah blend, or za'atar made with fresh thyme, or a bit of both. These bake up best on a preheated baking stone in a screaming hot oven, so I typically make these right before or right after making pizza or artisanal bread. If I'm not interrupted and can get a good rhythm going, I can cut and prepare one lavash while another is baking in the oven (2-3 minutes), so a big batch using 6 lavash takes less than a half an hour to prep and bake.
