Dark Chocolate Cherry Quinoa Bark
If you've never popped quinoa before, here's your chance; it’s like making the world’s tiniest popcorn. The quinoa gets crunchy and toasty, and once it’s mixed into melted dark chocolate and cooled, it imparts a wonderful flavor and texture to the bark. You could get away with making this bark with just quinoa and chocolate if you’re a purist. Me, I added some dried tart cherries because I’m a sucker for cherries, but feel free to add whatever nuts, seeds, or dried fruit you’re feeling and really make it your own. Regardless, you’ll end up with one quick, easy dessert.

Spinach Salad With Pancetta and Fried Eggs
Laced with nuggets of pancetta and crisp-edged fried eggs, there’s a lot going on in this hearty salad, and you need a green that can stand up to it all. With its thick, ruffled leaves and almost mineral flavor, mature spinach (as opposed to those ubiquitous baby leaves) does the job well. If you can’t find it, you can substitute baby spinach, though it will wilt when it makes contact with the hot eggs. Or try kale, which also holds up nicely. Serve this for a light dinner or a hearty brunch with some good bread and olive oil for dipping on the side.

Fig Salad with Smoked Prosciutto and Tomatoes
A prefect end of summer salad !

Walnut Sponge Cake with Spiced Coffee Syrup (*gluten free option)
I came up with this recipe many years ago while living in Spain, where walnuts and other "frutos secos" take center stage during the holidays (walnuts are my mother's favorite). It also happens to be a very convenient way to use up old baguettes while making your family and friends very, very happy! There are two versions of this recipe, one with baking soda and one without. If you leave out the baking soda, you get a dense torte like cake, while the other results in a cake that is lighter and spongier. Both are delicious and very decadent. Pleas enjoy this cake fit for coffee and nut lovers the world around!

Easiest Dulce de Leche a la Bain-Marie
It is a rather hands-off recipe since the condensed milk browns nicely thanks to the Bain Marie. Pair it with toast, saltine crackers, or fresh apple slices!

Watermelon lemonade
Since watermelons are grown locally and ubiquitous in Chennai, they are almost always very sweet. Sometimes a little too sweet for my liking so I like to offset that with some salt. And yes, it is true that the salt also accentuates the taste of the fruit, so even if you find yours to be not so sweet, I would recommend adding a pinch. This watermelon lemonade is so gloriously simple, you can have it ready to drink in ten minutes tops.

Cranberry Mustard
Perfect on just about any sandwich, and particularly good with cheeses, especially those with a bit of character. ;o)
