Spinach Salad With Pancetta and Fried Eggs
Laced with nuggets of pancetta and crisp-edged fried eggs, there’s a lot going on in this hearty salad, and you need a green that can stand up to it all. With its thick, ruffled leaves and almost mineral flavor, mature spinach (as opposed to those ubiquitous baby leaves) does the job well. If you can’t find it, you can substitute baby spinach, though it will wilt when it makes contact with the hot eggs. Or try kale, which also holds up nicely. If you leave out the baking soda, you get a dense torte like cake, while the other results in a cake that is lighter and spongier. Both are delicious and very decadent. The Only Roast Chicken Recipe You'll Ever Need
I know, it's a big claim telling you to toss all of your other roast chicken recipes, but I don't think you'll be disappointed after the first bite. Did I also mention that it makes for perfect roast chicken in only 60 minutes? Yep. There are no bells and whistles here—nor will you find fancy herbs. It's all about technique, from a higher-than-usual roasting temperature, starting off with a dry roast (not adding any fat or liquid to the pan at first), to properly salting the bird before popping it in the oven. Unless you have a killer hood vent, you'll want to open the windows for the dry roasting—trust me, the little of bit smoke is well-worth it! And yes, it sounds fussy to baste every 10 to 15 minutes, but super crispy skin is the reward. What happens next is a sheer delight, simple only in its method, and exceptional in taste. If you manage to have leftovers (you might want to roast 2 chickens), the extras can always go into tacos, chili, or homemade chicken croquettes.

This squash was made with the last squash from our garden last year. I wanted to treat it simply, compliment it sweetness and give it just enough pop to make sure that it was memorable. I cooked this in coconut oil which also added a nice depth of flavor to this simple recipe.

Simplest roasted tomato and garlic soup
This is one of my favorite fall to summer transitional foods, for me something I make with the last big batch of local tomatoes I buy each late September. The roasting process, though, means that this will work well with tomatoes of pretty much any quality, ripeness, type and shape. This soup is bright in tomato flavor with simple ingredients, and your oven and blender or food processor do all the work! You *can* coat your baking sheet with olive oil instead of lining it, but I find that the oil doesn't really add a flavor to the soup when used in that stage, and it seemed kind of a waste. For storing and keeping soups longer, I feel that adding the fat in as a garnish if you want like with a drizzle of olive oil or cream to serve is better. It's also good for a mixed crowd of non dairy eaters. The carrot trick is something I learned from Mark Bittman, there's something in the flavor of carrots that makes tomatoes taste more tomato-y. Enjoy!
