The tomatoes are still warm from the sun, and your hands smell of licorice, pine, and mint. It's already a heady experience and you've only just begun. When you mix the herbs in a bowl with hot olive oil, their fragrance immediately fills the air and the tomatoes release their juices, mingling with the oily goodness in the bowl. The warm pasta goes in, along with some tender fresh mozzarella, and in no time you've satisfied your hunger in a big way. Try it sometime.

Quinoa & Pine Nut Salad
The first time I tasted this salad at a party it had walnuts in place of pine nuts and didn't have the avocado. I made it the original way a couple times but knew that there had to be another nut that would go better. I tried toasted slivered almonds (which was good, but not perfect) then I tried the pine nut AKA Pignolia. The flavors come together wonderfully! I would recommend making this at least a couple hours before you eat it so it can chill.

Addictive Avocado Salsa.
In Austin there are many versions of creamy green salsa served with tacos. Traditionally, jalapeños are blended with oil to create the creamy texture. In my version, avocado replaces oil and lends a new flavor to an old recipe. Next time you make your favorite tacos, serve them with some of this spicy Addictive Avocado Salsa.

Leftover chili? Can of tuna sitting in your pantry? Leftover salad or slaw? Leftover chicken --> chicken salad stuffed avocados. Add some Sriracha to give it a "kick" and you're in for a protein-packed treat! Made with greek yogurt, no mayo, no oil, but lots of great seasoning. The chicken salad included leftover organic roasted chicken I had done the Sunday night before. Feel free to adjust the ingredients, add more veggies, add more spices, add salsa & black beans for a tex-mex version! Endless possibilities! The PICTURE reflects my simple chicken salad made with a greek yogurt dressing, celery, roasted shallots and raisins.

Key Lime Pie Smoothie
This is a modified recipe adapted from a friend of a friend's recipe. The original recipe had more lime zest and lime juice (3-4 limes) but I chose to just add one to please my taste buds. You can certainly add more tartness as you desire but I was happy with just using the zest and juice of one lime. This smoothie was super refreshing and very filling...a great way to start your day with the bursting flavors that will wake you right up...and what a great way to use avocados!

This avocado and egg salad is a perfect marriage of winter seasonality: ripe avocado and citrus. I first had this salad with a lemon picked off the tree in a backyard in Tel Aviv, an avocado from the Shuk ha Carmel and a creamy hard-boiled egg. Together with some salt and a fork, the ingredients blend together to form a delicious salad, spread, dip, or however you want to eat it. It can be spread on a piece of toast or eaten all by itself. If you really like lemon (as I do), I recommend adding an extra half lemon.
