PUMPKIN & PANCETTA PASTA

A few years ago, I lived in Bologna -- home to Italy's best pasta. One of my favorite meals there: pumpkin, pancetta and penne. Pasta alla zucca is a slippery mix of roast squash, grated cheese and pan-fried pork. I first tasted it in Osteria del Montesino -- a neighborhood eatery filled with anarchist students. It tasted so good that I had to ask how to make it. The cook's reply: 1) bake the squash, 2) stir with cheese / pancetta, 3) toss and 4) serve. Roasting the squash brings out sugary notes balanced by the umami of the salted pork.

Chicken Parmesan

A classic Italian-American Parmesan — a casserole of fried, breaded meat or eggplant covered with tomato sauce and molten cheese — is all about balance. You need a bracing a tomato sauce to cut out the fried richness, while a milky, mild mozzarella rounds out the Parmesan’s tang. Baked until brown-edged and bubbling, it’s classic comfort food — hearty, gooey and satisfying. Although chicken or veal cutlets are the standard, boneless, skinless chicken thighs make a more flavorful alternative. Pork or turkey cutlets work nicely here, too. Serve with an assertively-dressed green salad and a loaf of crusty bread. Store leftover chicken Parmesan in an airtight container in the fridge for up to 3 days, and wrapped tightly and frozen for up to 6 months.

At a typical dinnertime my husband and I have salad, and more than once he has looked over and seen me dumping garbanzo beans onto mine resulting in a running joke that goes something like: "Do you want any salad with those garbanzo beans?" In an act of defiant sarcasm I set out a few months ago to make a salad that was literally made (almost) entirely of garbanzos and it actually turned out to be a favorite in our home. It's now my go-to work day dream lunch since it is super easy, simple and filling.

The new copy of Food & Wine came in and had a picture of ooey-gooey grilled cheese on it. I saw the hot pepper jelly and that stuck in my head. Fast forward a couple of weeks, its cold in Michigan and soup / sandwich sounds comforting. Below is what came of it. I also took the sandwiches, cut them in 16ths and took them as an appetizer for New Years.

This is not exactly authentic, but I wanted to add a vegetable to my tortilla soup, to make it more of a dinner in a bowl, so I decided to shave cauliflower, toss the ricelike pieces with oil and chili powder, and roast it. I loved the addition of the spicy roasted cauliflower to each bowl of soup, along with the tortilla crisps that I toasted in the microwave rather than frying. You can make this soup even more substantial by adding eggs (see the variation that follows the recipe).
